Let's Taco 'Bout....Well, Tacos

In queso you didn’t know, we are celebrating both Taco Tuesday AND Cinco de Mayo today. This is the moment we’ve been training for, amigos.

Tacos are hands down my favorite food. If I could only have one food for the rest of my life, it would 100% be tacos. I just love that there are endless options for how to make them. Yes, tacos can be a nauti food (Sea what I did there?) when you load it up with queso, cheeses and sour cream. But the truth is, tacos are an easy way to continue eating a food you love while sticking to your healthier eating goals.

Before we consume the calories, try my Cinco de Mayo inspired workout. Not including your warm up or cool down (which is always a good idea), it only takes about 30 minutes and will make you feel like you earned those tacos!  
Now, back to our tacos. Excuse me, healthier tacos. Here are a few ideas to accomplish this:
  • Swap out the taco shell and use lettuce wraps instead or make a bowl on a bed of greens
  • Opt for guacamole over sour cream 
  • Hold the cheese (you can do it, I swear!)
  • Use sauces that are lower in calories like salsa or hot sauce instead of creamier-based sauces 
  • Load up with veggies
  • Opt for shrimp or white fish is using animal protein to save calories
But Kristy!!! No sour cream or cheese? I must be loco.

Trust me, when you load it up with juicy veggies, beans, and guacamole, you won’t even miss it. To help you fiesta this Tuesday, I’ve compiled 3 taco recipes I’ve tried and love. 

Spicy Shrimp Tacos with Creamy Sriracha Sauce and Cilantro Lime Slaw

  • These have a kick, but are so delish! One tip, prepare the shrimp the night before (or at least a few hours before) to really let the marinade soak in. It makes a big difference!

Blacken Chicken with Pineapple Salsa

  • The pineapple salsa is what made this recipe for me. I LOVE fresh ingredients on my tacos. The sweet of the pineapple mixed with the spicy jalapeno was really good.  

Tzatziki Fish Tacos

  • Anything I’ve ever tried from Skinnytaste has been amazing. When I saw this recipe, I had to try. Greek food + tacos felt like a dream come true. Why had I not thought of that!?
  • Are you gluten free? I used GF all-purpose flour and subbed rice crumbs (that I found at Trader Joe’s) for the panko crumbs. You can use GF tortillas or corn tortillas. 
  • Pressed for time? You can buy store bought tzatziki at any grocery store, including Aldi.
Something else to keep in mind, making your own taco bar is a fantastic and affordable idea for post Covid-19 parties to allow for healthier options for you and your guests. Building your own taco? Try these options:

Protein ideas:

  • Shrimp
  • Fish
  • Beans- refried, black, pinto
  • Lentils
  • Beef
  • Chicken
  • Pork

Topping ideas:

  • Greens – lettuce, arugula
  • Coleslaw
  • Grilled veggies
  • Mango
  • Green onion
  •  Onion
  •  Tomato
  • Cheese – change it up! Mexican, mozzarella, pepper jack, feta
  • Cilantro
  •  Cabbage
  • Shredded carrots
  • Peppers – bell or spicy
  • Corn
  • Olives
  • Pickled veggie

Sauce ideas:

  • Salsa
  • Guacamole
  • Sour Cream
  • Sriracha Mayo (mix mayo and sriracha)
  • Hot Sauce (my fave is Chihuly!)
