Poke Bowl Meal Prepping

Whether your goal is to eat healthier, lose weight, or simply make your life easier, meal prepping is a BIG factor in determining your success.

Have you heard the saying, “when you fail to plan, you plan to fail?” It’s so true! Not having convenient, ready-to-go-food handy is a big reason why many of my clients “cheat.” Opting to “just go get something,” snack (which can pack on more calories than a full meal depending on what you eat) or reach for something easy, which a lot of times isn’t the healthiest choice.

Many people think meal planning takes too much time, but the truth is, it saves you time the rest of your week! You cook once and can eat 3-5 times throughout your week.

I only spent about 35 minutes making these poke bowls, and then ate for lunch everyday that week. Here is how I made these poke bowls.
Ingredients

Brown rice

  • You can always use noodles or millets

Marinated tofu

  • You could also use shrimp, chicken, or protein of your choices
  • I divided my tofu in half and marinated half in a sweet and sour chili sauce and half in a Thai red curry sauce)

Vegetables/Fruits (Don’t be shy here! The more, the merrier. I used what I had at my house)

  • Edamame
  • Carrots
  • Kimchi
  • Water chestnuts
  • Green onion
  • Radishes
  • Basil
  • Other ingredients that could be used if available: Daikon, Cabbage, Seaweed, Corn, Mango, Avocado (better if added after warmed up), Cucumbers, Cilantro

Spicy Mayo

  • After I warmed up each day, I topped with a mixture of avocado mayo and sriracha for a little kick. And then sliced avocado.
Prepping Tips 
  • Marinade your meat for 2-4 hours at the bare minimum. 
  • While rice is cooking, start chopping your veggies.
  • Set out all bowls 
  • When rice is completed, assemble bowls. Adding your protein, fruits, veggies, toppings, etc. 
  • Store in the fridge and consume with 5 days.
That’s it! It was so easy and tasted so fresh every time I ate it!
