4 Easy Memorial Day Grilling Recipes

Memorial Day weekend is here. For many of us, this is the official start of summer. And y’all, we’ve had quite a year. We need something to celebrate, am I right?

So whether you’re planning for a pool day, beach day, picnic in the park, or just a backyard cookout, I’m here to help you celebrate in a healthy way with 4 simple grilling recipes.

Hosting or attending a cookout is always fun. Plus, it really can be an easy way to enjoy family, friends and great food while being able to control what you eat. As the host, you have control of what foods you will be serving, so use the opportunity to offer nutritious foods.

When I host, I always have a veggie platter and a fruit tray for guests (and myself) to snack on throughout the party. Buying these from the store can be expensive, so here is a tip; pick up the ingredients from the local farmers market and make it yourself. Prepping the tray will literally take less than 15 minutes and you can serve local, pesticide-free fruits and veggies for a fraction of the cost. Plus, our local economies need us right now (and always, really).

When I attend a party, I always make sure to bring foods I can eat. Always. Even when the host says “you don’t need to bring anything!” I do this so I am not as tempted and to ensure I have options. As someone who tends to be mostly plant-based, gluten free and avoids dairy, it can be really hard to find foods at a party. Bringing my own food, and enough for others, helps me stay on track, know I will have food options, and not feel deprived, because other people end up eating the foods I bring.

So with that said, here is your Memorial Day grilling lineup – whether you are the hostess with the moistest or the best guest:
Margarita Shrimp

Ingredients

  • 1 lb. raw jumbo shrimp (16 to 20 per pound), peeled and deveined
  • 1/3 c. olive oil
  • 2 large garlic cloves, roughly chopped
  •  1 T. brown sugar
  •  1 tsp. smoked paprika
  • 1 tsp. chili powder
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. cumin
  • 1 tsp. kosher salt
  • 1/2 tsp. black pepper
  • 2 tsp. tequila, optional
  • chopped cilantro

Directions

  • Place shrimp in a wide shallow bowl and set aside.
  • In a small bowl with high sides, combine all ingredients from olive oil through black pepper. Mix well or use a food processor or blender. Pour marinade over shrimp and gently stir to coat evenly. 
  • Cover and refrigerate for 2 to 3 hours. I did mine overnight!
  •  Drizzle tequila over the shrimp, if desired, and gently fold to combine. If using skewers, thread shrimp onto skewers.
  •  Heat grill to medium-high and cook 3-4 minutes each side. 
  •  Place shrimp on a platter and sprinkle with cilantro. Serve with fresh lime wedges to squeeze over the top.
Chicken Kabobs
This is a marinade my mom has used for years. Without fail, every time I use it, someone asks for the recipe. One tip I always share is to marinade the chicken and veggies in this marinade overnight to really let it soak in!

Ingredients

  • ¼ cup Olive Oil
  • ½ cup red wine vinegar
  • 1/3 c lemon juice
  • ¼ c soy sauce (or coconut amino for gluten free)
  • ¼ c Worcestershire sauce (this has gluten, so look for a GF version if needed!)
  • 2 T ground mustard 
  • Pepper
  • 3 garlic cloves
  • Chicken
  • Veggies of your choice (I used baby potatoes, onions, bell peppers)

Directions

  • Mix all ingredients from olive oil to garlic cloves
  • In a large glass dish, place chopped chicken and chopped veggies
  • Pour marinade over and keep in fridge 4+hours. I recommend overnight!
  • Make kabobs using the chicken and veggies
  • Grill until cooked
Foil-Wrapped Veggies

Ingredients

  • Veggies of your choice (I used summer squash, zucchini, grape tomatoes, red onions)
  •  Olive Oil
  • Seasoning (I used garlic salt, seas salt, and Italian seasoning)
  • Fresh garlic, chopped fine
  • Aluminum foil

Directions

  • Chop ingredients and place in aluminum foil.
  • Drizzle olive oil and season to taste
  • Wrap ingredients, so the foil completely covers all vegetables 
  • Grill until tender
  • Optional: top with feta or Parmesan cheese
Grilled Pineapple
The easiest, most delicious dessert recipe you will ever grill! With only 2 ingredients, and almost 0 prep time, this is perfect for any party!

Ingredients

  • Pineapple
  • Cinnamon

Directions

  • Cut pineapple into medium slices
  • Sprinkle with cinnamon
  • Cook on grill until the pineapple softens
